2020 Holiday Tips and Tricks: Buckeyes: An Ohio Holiday Tradition

Brenda's Buckeye's
3 lbs. confectioner's sugar
2 lbs. Creamy Peanut Butter
1 lb. butter

Use butter at room temperature. Mix butter, peanut butter and confection's sugar together until smooth, adding sugar in 1 cup increments to make it easier to mix. Put into refrigerator for at least 30 minutes to make it easier to roll balls and not stick to your hands. Roll into 1 inch balls and put back in refrigerator until ready to dip.

 Use a double boiler to melt chocolate. Use one large bag of chocolate chips and 1/2 Stick of paraffin wax. To insure the best success, make sure the peanut butter balls are cold and the chocolate it hot.

Using a toothpick, stick it into the top of the peanut butter ball and dip into the chocolate about 3/4 of the way. Set on wax or parchment paper to dry.

Makes 250 buckeye (can be divided in half)
